With summer approaching we’ll soon be seeing zucchini at the farmer’s market. These small, summer squash is a good source of vitamin A, folate, and potassium. Even the yellow flowers of young zucchini are edible. In some countries it’s also known as “courgette” and in Southern France it’s the basis of the dish Ratatouille. So this summer don’t forget to eat your zucchini.
